I think my easy-to-follow recipes can be made by absolute beginners and enjoyed by everyone. Home Made Low Carb Pizza Crust

Fat Head Pizza

Pizza night has always been one of our favorites. There's just something about the great flavors and the informality of it all.

Of course, when embracing a low carb lifestyle, carbs have to go... which means no more pizza because of the flour used for the crust. 

For us, this was almost too big a sacrifice to make.  But we did it and did without pizza until we discovered this recipe.  So, if you're a pizza lover, try this at home. It’s easy and healthier than take out. And it is delicious!

This recipe is based on the original Fat Head Pizza recipe.


Makes 1 crust – 4 servings

Per Serving (excluding toppings):

  • Calories: 298.5
  • Protein: 15.5g
  • Carbs: 6g
  • Fat: 24.75
  • Fiber: 2g
  • Net Carbs: 4g
  • (21% Protein, 71% Fat, 8% Carbs)

Ingredients

  • 1 ½ cups shredded mozzarella
  • ¾ cup almond flour
  • 2 tbs cream cheese, cubed or cut up into small chunks
  • 2 tsp Italian seasonings
  • Pinch of salt
  • 1 egg, beaten
  • Garlic salt
  • Parchment paper
  • Cookie sheet

Steps

  1. Preheat oven to 425°
  2. Put mozzarella & cream cheese in a medium size microwaveable bowl.
  3. Microwave for 1 min, stir with a fork and then another 30 sec, stir again.
  4. Stir in the Italian seasonings, salt, egg and almond flour making sure to incorporate everything well.
  5. Place the dough between two sheets of parchment paper, the size of your cookie sheet. Roll out the dough evenly.
  6. Transfer the dough to the cookie sheet with the parchment paper still adhered to the bottom. Discard the top piece of paper.
  7. With a fork, poke holes all over to keep the crust from bubbling.
  8. Sprinkle with garlic salt.
  9. Put in 425F oven and bake for about 12 minutes or until slightly brown on top. Check for bubbling half-way through. Poke down if there are any bubbles.
  10. The crust is ready for your favorite toppings. Start with a sugar free tomato sauce or pizza sauce as the base, add your veggies and cooked meats and finish with mozzarella.
  11. Return to the oven for another 8-12 minutes or until the cheese has melted and browned to your liking.

Pizza night is back! Yummmmm!
